Rice Bubble Slice Recipe

This is one of those super easy recipes you can whip up for afternoon tea, put in the lunch box for a treat, for parties or take when you need a plate for an event.  There are many versions of this recipe around the web; this is how I make Rice Bubble Slice.

Ingredients

2 x packets of 180 gram marshmallow packets (any flavour)

60 grams butter

6 cups Rice Bubbles

1. Melt butter on low heat in a saucepan.

2. Add marshmallows to the melted butter.

3. Stir constantly until melted.

4. Pour marshmallow mixture over 6 cups of rice bubbles (that are in a separate bowl) and combine quickly.

5. Line a large rectangle plastic container (or slice tin) with baking paper. The size of the tin will determine how think the slice is (it doesn’t really matter to the end result).

6. Press the rice bubble mixture evenly into the lined container with a knife.

7. Refrigerate for about 30 minutes.

8. Using a sharp knife, cut into even sections and serve.

They are very sweet to I don’t make them all that often but they are on my easy whip up list of recipes.

Variation

Add dried fruit, choc chips or any other mix in you like.

i would like more recipes as iam starting to run out of ideas on what to give to my 7mth old…she yes a very good eat’er and will eat anything thank you

We tried this recipe for the first time these holidays. I microwave the marshmellows and butter together. Next time I’m going to use less marshmellows to try and cut back on the sweetness. This slice doesn’t last long at our house.

After making this a few times, I thought the same: seeing if I can reduce the marshmallows etc. If you work it out, let me know!

The recipe I used was 4 cups of rice bubbles ( i used closer to 6), 200gms of marshmellows (used only the white ones so ended up with approx. 180gms), and 60 grams of butter. The rice bubbles seemed to hold together well. I hope this helps. Do you store them in the fridge or cupboard? I stored them in the fridge and found they went stale quickly.

In the fridge…in a house of six it doesn’t last long enough to get stale. I worry about the ants getting it if I leave it out. (So many ants at the moment!)
